- 4 haddock fish fillets (or use plaice if you prefer)
- 2 pak choi
- 4 spring onions
- 1 red chilli deseeded
- 2cm ginger (or 1tsp of lazy ginger)
- 2 tbsp reduced-salt soy sauce
- juice 1 lime
- 1 drizzle of sesame oil
Whilst you preheat the oven to 200C put the fillets in individual foil squares. Thinly slice the pak choi, chilli, ginger and spring onions, place on top of the fish and pull the edges of the foil around it.
Mix the reduced-salt soy sauce, lime juice and a little water and pour over each fillet. Wrap the fish up tightly so the fish can cook in its steam.
Add the parcels to the oven in the middle shelf resting on a baking sheet and leave for 10-15 minutes or until cooked through.
To finish just drizzle a little sesame oil and serve with rice. I like to leave the fish in their parcels so that you can add the rice into the parcels to soak up the lovely sauce!
